2-Ingredient Pancakes


I love pancakes, and these were a REVELATION when I first made them!  Just 2 ingredients in a blender and you are done.  I suggest using a very thin spatula and a little practice in flipping…


  • 2 eggs
  • 1 banana


  1. Blend ingredients in a blender or food processor.
  2. Pour into 3-inch pancakes on a pre-heated pan or griddle.
  3. Flip when browned.
  4. Optional:  Sprinkle on some blueberries or chocolate chips before flipping.
